Smoked Turkey Club Sandwich Spread

Ingredients:

2 cups minced Hillside Smoked Turkey 1/4 cup mayonnaise
1/4 cup olives (sliced) 1/4 cup almond (ground)


Preparation:

Mix all ingredients well and serve on crackers, melba toast, or pumpernickel bread. Pecans or Black Walnuts may substitute for almonds. 


Turkey Quick Spread

Ingredients:

2 cups minced Hillside Smoked Turkey 1/4 cup mayonnaise
1/2 cup pickles  


Preparation:

Mix all ingredients well and serve on crackers, melba toast, or pumpernickel bread. Pecans or Black Walnuts may substitute for almonds. Chop the pickles into little squares, mix with the minced turkey and servce on crackers, melba toast, or pumpernickel bread.


Smoked Turkey a La King

Ingredients:

3 tablespoons butter or margarine 1 1/2 cup milk
1 cup diced mushrooms  1 tablespoon diced pimentos
2 tablespoons minced green peppers    2 tablespoons minced green peppers 
2 egg yolks        2/3 Cayenne pepper
3 tablespoons sherry (optional)        3 cups Hillside Smoked Turkey (diced)
1 cup Hillside Smoked Turkey stock or 1 cup milk  


Preparation:

Brown the mushrooms and green peppers in margarine. Add flour and salt together and cook until thickened. Add smoked Turkey and pimentos, and cook for 10 minutes. Stir yolks and sherry. Serve on toast or rice. Serves 6.


Smoked Turkey Casserole

Ingredients:

1 1/2 cups Hillside Smoked Turkey, diced or sliced   1 can creamed mushroom soup
2 1/2 cups cooked noodles      1/2 teaspoon savory
2 tablespoons minced green peppers    1 teaspoon salt (pepper to taste)
1 can water           6 tablespoons sharp cheese (grated)  


Preparation:

Mix the cooked noodles and Turkey together. Add soup, water, and spices, and place in casserole. Sprinkle top with grated cheese. Bake 30 minutes at 325 degrees. Serves 6.


Smoked Turkey with Scrambled Eggs

Ingredients:

8 eggs 1 teaspoon salt
2 tablespoons water    1 1/4 teaspoon pepper
3 tablespoons butter or margarine    1 tablespoon fine herbs
1/2 cup Hillside Smoked Turkey pieces         


Preparation:

Beat the eggs , and mix water, Smoked Turkey and spices together. Then melt oleo or butter in frying pan. Add the egg mixture. Stir and cook to consistency desired. Serves 6.


Smoked Turkey Almonetts

Ingredients:

2 cups minced Hillside Smoked Turkey 1 teaspoon garlic vinegar
1/2 cup ground almonds    1/2 teaspoon salt
1 tablespoon horseradish  (add mayonnaise accordingly)
1/8 teaspoon pepper  


Preparation:

Mix ingredients and serve on crackers, melba toast, pumpernickel or small pieces of toasted bread. Will make approximately 20 to 25 sandwiches.
